Thankful Thursday

 

Happy Thursday, friends! I hope your week has been good so far! I have many things to be thankful for this week and will just jump right in. Have you seen Rebecca Jo's blog posts this week? She is easing back into it, so check them out and give her some love!


We've been studying a lot about the Holy Spirit in our Bible study, with Him being our helper. I am so thankful for this and have been on the receiving end of His help time after time. He has helped me by comforting me, by giving me His peace, by helping me in remembering how to do things, by leading me to do something, by helping me as I've stepped outside of my comfort zone. I feel like I am stepping outside of my comfort zone every single Wednesday as I lead a small group of women in Bible study every week. I am thankful for the opportunities the Lord gives me, though.


I am so thankful for blog friends turned in-real-life friends, like this sweet lady and fellow blogger that many of you know as Marilyn from Memphis Bridges! You can click on her name to read her blog.  



We've actually met before, at a Bible study at my church, a couple of years ago. We met Tuesday afternoon at the cute little coffee shop I love on our square, where she had tea and I had gelato and a Diet Coke. 🤣 I know, I know, it's a strange combination, but for some reason when I eat ice cream I also have to have a Diet Coke. 


By the time you read this, I will be grateful that it's Thursday! I've had something taking up a lot of thought and brain space in my head all week and I think it's been making me lose sleep every night. Aren't some things just like that? I am a classic overthinker—it's astounding how much I let something eat away at me. 


I am thankful that my mom and I are at least able to talk everyday, even if we don't see each other all that often anymore. She and I would always spend a day together one day every couple of weeks, but since I've started working, we haven't done that. We do have our Saturdays and we have our early morning phone conversations. Those things are better than nothing. 


I'm thankful my mom-in-love is able to come over after Bible study on Wednesdays. I love that time that we have together, because otherwise, I don't know when I would see her. Life is busy for me right now!


I'm thankful for godly friendship and fellowship. I say it all the time, but it always bears repeating: life is hard and we are not meant to walk through it alone. Our husbands are wonderful, but they are not the same as friendship between women. Women connect with other women through friendship that cannot be compared to the relationship between a husband and a wife. I get multiple opportunities for this each week and I don't take one of them for granted. And friendship is such a strange thing that ebbs and flows—I have friends that I rarely see, but when we get together and make that effort to me, we pick right back up. There are others who are so busy that it's hard to find time to meet! I totally get that, because life feels like that for me right now, even though it's nowhere near as busy as their life. It's important to remember to be there for one another and to make continual effort to be close. A text takes less than one minute to send to let someone know you're thinking of them.


I am thankful for the amazingly beautiful and cooler weather we've had. Now, as I write this it's Wednesday afternoon and a sunny 86 degrees, but friends. Eighty six with humidity is WAY different than the eighty six it is right now with little to no humidity. It's glorious! I dressed for Fall yesterday, like the basic fall-loving girl I am and I didn't care how hot it got outside. I am ready for those colors, the sweaters, everything. That being said, you should come back next week when I share about my fall bucket list.

life on mission

 


Happy Wednesday, friends! I thought I'd share something I was encouraged by last night. I attended an event at church to run the technical side of it, but I left feeling so encouraged. A branch of our women's ministry at church is called Women on Mission and while it's always been mainly older women who participate in this, we're trying to make it church wide for women of all ages, from eighteen on. This event was the kick off event for the next year of ministry. Seeing these ladies here is the sweetest thing to me. 






These are women who are older, as you see, yet they never stop serving God through active ministry. These ladies make knitted items for babies in hospitals, they collect goodies for and stuff Christmas boxes every year, many of them travel to another city and state to fill them in the distribution center for Operation Christmas Child through Samaritan's purse, they collect food and go to a local inner city school during the summer months to feed the teams of people who travel there for mission work within those impoverished communities, they are passionate about spreading the love and good news of Jesus. 


Basically, I want to be just like them when I grow up. 


I love something that their fearless leader, Mrs. Betty said: you don't have to go far outside of your community to do mission work. I wholeheartedly agree! Often times, our own next door neighbors are great opportunities...as are the people we come into contact with on a daily basis. Sometimes living life on mission actually means what it sounds like. I was having lunch with friends one time, when one of them stopped our waitress and told her we were about to pray and how we would love to pray for her as well. The young lady got so emotional over this and she shared with us a way we could pray for her right then. I loved witnessing that and thought it was such a simple and heartfelt way we can love on others.


Sometimes life on mission means offering a smile and a word of encouragement. There's a young man in my grocery store named Jonathan who is special needs and who is always stocking produce when I visit. I always stop and greet him by name and we talk. Sometimes he complains to me and I just listen sympathetically and sometimes I offer to pray for him. There's another man who works there who is also special needs who always wants to tell me something exciting. I love how simple it is to bring a smile to someone's face. You never know what people go through!


Sometimes life on mission means doing a good deed, or doing the right thing even when nobody is watching. I recently read an idea that someone shared on social media about ways to "pay it forward" other than buying someone's coffee at the drive-through: it was calling the local elementary school and paying off delinquent accounts of all the students you can afford in the lunchroom. I love that idea, especially because that's what I used to do. I was the lunch lady who walked around to help the students while they ate lunch. 


Life is hard and we all need encouragement from time to time. Remember the year of lockdown and how lonely all of us were? I will never forget how isolated I felt. Ever since then, we've had more of an opportunity than ever before to share the love of Jesus with others. The world is a mean place right now and often, the events that take place on a daily basis are overwhelming. I don't know the statistics of this, but anxiety and depression are diseases that are at an all time high right now. Almost every time I am in a conversation with someone, anxiety is something that is mentioned. There is no shame in asking for help and for talking to others about the hard things we go through. I am one who will quickly share when I am in need of prayer. I take very seriously James 5:16—


Therefore, confess your sins to one another and pray for one another, so that you may be healed. The prayer of a righteous person is righteous in its effect. 


These are just a few thoughts I had after last night and how I felt after being encouraged. So tell me: are you one who looks for opportunities to minister to or encourage others? I would love to hear how you do this on a daily basis. I don't do this every single time I'm out, so don't think I'm some saint. I assure you, I am not! I was aggravated over someone who cut in front of me in a line at the pharmacy last night, so trust me, I have my moments. How do you do this? Have you ever been on the receiving end of such a thing? I would be willing to bet that we've all had someone that extended some kindness to us that stands out. I'd love to hear from you!

dinner inspiration post

 


Happy Tuesday, friends! I thought I'd share some things we've been eating and snacking on lately, including what the people in my house LOVE from Costco. I hope it inspires you with some ideas for your week.


Last night we had the most amazing taco salad. Well, not quite as amazing as the one Bill made for us for Trish's birthday dinner two weeks ago, but it was a close second.



I am thinking about taking the leftover ground beef and making this with it for my weekend. I just need some peppers, onions and taco shells, but these are baked tacos that are so, so good. I have made these a few times and every time, we love them. We eat Mexican a lot because it's our favorite and because it's super healthy for my hubby. I wish I had a picture of our taco salad from last night, but I was too hungry to stop and take a picture for you, but I made it similar to how my stepdad made it for us. I chopped up the lettuce really finely, I diced each of us a whole tomato, I put a heaping spoonful of taco meat on top of the lettuce tomato and topped it with shredded cheese, salsa (for me) and a tiny bit of ranch dressing (also for me). Todd ate his plain, and we both ate it with crushed tortilla chips in big bowls.


I've written about this quiche several times, but it's worth repeating, because I have finally found a recipe that is the best, after many tries of tweaking.



I use any filling I have on hand, but for tonight I'm using chopped ham, shredded cheese and spinach. Here's the recipe that is our favorite.


5 eggs

3/4 cup of milk

1/4 tsp salt 

1/4 tsp pepper

1/4 tsp nutmeg (do NOT skip this, it adds depth of flavor and is so good)

1/4 tsp hot sauce (again, don't skip this either, strange as it may seem)

1 cup of ham

3/4 cup of cheese

spinach


Mix together and pour into premade pie crust, baking at 375  for about 45 minutes. I always double the recipe and make two at one time, because it is that good. I also love to take this with me to events when I sign up to take something. It can be eaten at room temperature, after it's been cooked, especially when it's a vegetarian version.


We'll eat leftovers on Wednesday night and I'll eat after church because of choir rehearsal and Thursday is to be determined. I will see what I have on hand and go from there, but I have lots of options. I will be gone Tuesday, Wednesday and Thursday nights of this week, so though I'll be gone, I still plan on having food here for them. OH! That's what I'm doing for Thursday night. I bought Todd some frozen fish fillets for his dinner that night, along with rice and veggies.


Onto the Costco portion of this post. Have you ever had their chocolate chunk cookies from the bakery?



They are TOO DIE FOR and my Jonah loves them. I usually buy two containers at once, they get eaten up so quickly, thanks to all the guys and their friends. I also used to love to buy their croissants, but since I'm trying to keep away from bread, it's best I stay far away. 



Another favorite thing of mine from Costco are these k-cups. I have tried brand after brand of coffee, but I always go back to these. If they sold it in a bag, I would have bought it, but to my knowledge, this is different in the k-cup version of what they sell by the bag. 



This was my husband's idea of a funny joke last year when he went to Costco for me. He came home with all these containers of their peppermint bark! It was a good thing all of that was able to be kept in the freezer, because that is what we did. It was so good to have with an afternoon cup of coffee! He will not be doing this again this year, because of his healthier eating habits, but I'm going to still sneak one in when I see it in the store. 


My last favorite thing to get from Costco is their shrimp cocktail and/or shrimp salad. It is delicious! I love to have shrimp cocktail on the weekends with some naan dipping bread and spinach dip or hummus.

weekending/Hello Monday

 


Happy Monday, friends! I'm linking up with Holly and Sarah for this weekly blog post. 


I had THE most boring, low-key weekend. So much so, that there isn't anything to write about other than one or two things that kicked it off. The first is that I went to get my nails done Friday morning. They still looked really good, but they were so long that they were driving me bonkers. I may go back again before I leave town in two weeks...because if I don't, they'll be so long that I'll be ready to get them done again the day after I come back. I usually never go more often than every three weeks, but I may break my own rule this time. Look how cute they are, though!




My friend and I who are just alike in personality were talking about the trend of gradient nails right now. Did you know that is what this is called? I didn't. The pinkie and thumb are black, the ring finger is an OPI color called Less Is Norse, the taupe is another OPI color called Don't Bossa Nova Me Around and the white is one I don't know the name of. I love them!


The other thing is that my dad and I enjoyed our afternoon together. Todd worked all weekend, so I was alone most of the time, which I didn't mind too much. I watched many episodes of a show I'm trying to finish, but more on that another time. And that's basically all I did, even forsaking the plans I made to work on my closet, though I did do some other minimal things. Some weekends are just like that, I guess. Because there wasn't much to report there, I thought I'd share about a few random things in our house or in in life. 




Every time I take a shower, I remember how much I love these shower racks that hold our essentials. This is the second kind that we've had. The first kind were some we bought at Lowe's that were the kind that were for the corner of the shower. They were okay, but they took up too much room, so Todd ended up buying these on Amazon. I love how slender they are and we scaled down all that we have and use that really needs to be in there. This is what we came up with: his shampoo and my shampoo and conditioner, body wash and a razor. We have another little one that hangs on the other wall to the right that holds our soap. We try to keep it clean and organized. How do you keep your shower things organized? I feel like most of you are like us and don't have a ton of space there for things like this.




I took this picture above several months ago when I helped with the technical side of things for one of our women's events. We're trying to become self sufficient in the women's ministry, meaning that we don't need additional people to come just to run things for us if they don't have to be there. I've started doing more and more of this and I learn a little something new each time I help. I think this is reasonable and a great idea. All I've asked is that our tech director would remain patient with me as I learn a little more with each event. He promised he would be. He also suggested that I find someone to help to start training them, in case I can't be there, so my friend Rachel is going to start helping me this week at Bible study. 





I really, really love a thoughtful and unexpected gift. My oldest son Graham traveled to Gatlinburg back in the spring and he brought me home some yummy smelling candles. This one above is one. I burned it a little when he gave it to me, but I quickly put it up for the fall and I've been enjoying it ever since I brought out all the fall décor. 



Many of you may remember that my pastor's wife almost died last year when she contracted covid and pneumonia. It's so hard to believe that it's been right at a year since she got sick, but I came across a picture of them recently that I shared right after she got sick to ask for prayer for her. It's such a miracle that she made it through, and I know she gives God the glory for healing her body. She is still affected by the long lasting effects of her very long hospitalization, but she is a fighter. I also took this picture above about a year ago, and when I saw it last night, it reminded me of Darlene. She missed all of fall and barely made it home in time for Thanksgiving, but it was months before she went out in public. Isn't that amazing? 


One last thing and I'll wrap it up here. Our weather here this weekend felt like the perfect fall weather weekend. It rained all day Saturday, which I was glad for, because we needed it again. After the rain finally moved out, it was sunny again, but the temps remained cool for the rest of the weekend. Last night it felt AMAZING when I took the dogs outside. I let them stay out there for a bit while I watched them, because this kind of weather always makes them frisky. I love seeing them act like that! They usually look something like this. How's all of that for random? Surely I'll have more interesting blog content for tomorrow. 🤣

Friday Favorites, 9.9.22.

 


Happy Friday, friends! I'm linking up with Andrea and Erika for this favorite weekly blog post. How has your week been? 


Mine has been good, personally and in spite of great tragedy amidst our city. May I be honest though? Twice this week, our city has made national news and not in a good way. The first time is because there was a woman who was kidnapped a week ago today, then murdered and found days later. She was an heiress and though they're saying this is a random and one time thing, so many of us have questions and concerns. I keep praying that the truth will come to light, even if it's how they say it went down. She was a young wife and mom to two little boys...and I cannot imagine the heartbreak her family feels and I have prayed for them countless times this week. Unfortunately, we have many murders each year in our city and most of them don't even make local news, much less national news. It bothers me that all those other crimes like we hear of go unmentioned and this one gained national attention...isn't all life precious, in the sight of God? I ask rhetorically, because yes, all life is precious in His sight, no matter age, race, gender or financial status. In my mind, it doesn't make sense to elevate one such case and not all the others. 


The other horrifying thing that happened here this week is that on Wednesday, for over five hours, we had an active shooter who was driving all over the place shooting people. He kept hijacking cars and changing vehicles, then he would move on to his next victim. He shot seven people and four of them died. He was all over the city and everything that was open near where he was, was put on lockdown mode and shut and locked their doors...restaurants, the Redbirds baseball stadium...my Drew was at work downtown at a restaurant when all of this went on and he heard gunfire a few blocks over from where he was. He was texting me nonstop and I talked with him as he drove home when they were finally released for the night. All of this is heartbreaking...and friends, it's not a city or a race problem, it's a SIN problem. I saw this on Facebook yesterday and agree wholeheartedly. 




Is this not true? A friend of mine who pastors a church in the heart of Memphis shared this on Facebook yesterday:

"If sinners like you and I are sad or mad over human evil, imagine how grieved and angry God is over human sin considering He's perfectly holy and that He's the One we're ultimately sinning against. His solution to evil is not to destroy all the evil in this world all the time (as much as we in our human brain sometimes wants Him to do that). I don't want that because He'd have to start with destroying me and my evil heart. But rather, His solution to evil is the Lake of Fire. Vengeance is the Lord's and He will repay. You see, sinners are having their day right now. But rest assured the Lord will have His day. I say this with grief and sadness in my heart. There's no joy in the perishing of souls, just sadness and tears. So, whether you're an active shooter of simply sexual immoral, reject Jesus no longer, dear friend. Follow Him before His day comes. The Lord's day is God's solution to evil. Death itself will be thrown into the Lake of Fire, and evil will be no more."




Joyce Peterson is a news anchor in Memphis and you should Google this statement with her name and watch the video. She broke down mid-sentence and it's so moving to see her so vulnerable and raw.

And then, as we all know by now...the beloved Queen of England died. A favorite author of mine posted this snippet from her Christmas message from 2014 and I thought I'd share it here:


"For me, the life of Jesus Christ, the Prince of Peace, whose birth we celebrate today, is an inspiration and an anchor in my life. A role model of reconciliation and forgiveness, He stretched out His hands in love, acceptance and healing. Christ's examples has taught me to seek to respect and value all people of whatever faith or none." 


Maybe I'll meet her in Heaven someday. Maybe I won't care, since Jesus will be One I'm there for, to see and worship on the throne. On a much lighter note and in honor of her death, I share this favorite memory from a couple years ago with my best friend.




Please excuse the blur of the first picture...it cracks me up, though! This is the closest I ever got to seeing her. 




Such things to look back on are good for my soul in the midst of darkness throughout the week. I didn't mean to go on and on, but I couldn't write this post in good conscience without acknowledging some of the evil that has taken place near us this week. I'll share a few more favorites from this week. 




Funny memes like this are always my favorite! We all need laughter. I promptly texted it to my best friend.




Being at church is one of my favorite places to be. I love to serve there and to be able to attend Bible study and to lead a small group. What a privilege that is! I don't take it lightly.




One of my favorite pictures of Drew messing around with an air compressor hose at my husband's shop...he has always been crazy! I laugh so hard just looking at this. 





One day this week I mentioned a favorite thing to do at night when I'm bored and don't want to be on social media...I scroll and pin on Pinterest. 



This favorite jar of pens always sits nearby when I'm having my quiet time in the mornings. I am such a school supply nerd! I still get so happy when I browse this aisle at Target. 




I also mentioned this already this week, but this view going into work on the days when I work is a favorite. I love this park area of our square and I like to sit and enjoy it on the days when it's nice outside. I haven't done that in a long time, but I plan on doing that with Dad on one of our Fridays when the weather changes. I can't wait to see them start to decorate! Once they start putting the pumpkins out, it's like our own little Stars Hollow. If you know, you know.

Thankful Thursday

 


Happy Thursday, friends! I can't believe it's already Thursday...thanks to a lovely Labor day, the week is flying right by. I'm here with the weekly link party where a few of us share about all that we're thankful for. I don't know about you, but I love this post that my sweet friend Rebecca Jo started and I miss her blog! Give her some love if you see her on Instagram! It's good to feel missed. That being said, I love this post because I love looking for bright spots among the darkness that we live among in this great big world. I love that by being intentionally thankful, it focuses my eyes where they need to be—on Jesus. Life can be overwhelming with all the instant everything we have these days. A pastor that I heard speak last year said that—we've never had all of the world's news at our fingertips before and it can be overwhelming! I digress. If not for Jesus, I'd be a mess.


I am thankful for a lovely long weekend! I said this recently, but I'll say it again: now that I'm working part time, I have a new appreciation for weekends, especially long ones! It felt restorative and restful, which is just how I like them, with a perfect blend of extrovertedness and introvertedness. 


I am thankful for family members who are helpers. I'll give an example: Noah came home on Friday telling me about a terrible wreck he witnessed on his way home. It was an older man driving a car and his car was in a tree. He pulled over to see if there was anything he could do to help, but it shook him, because the man was stunned and bleeding profusely from his nose. Noah ended up leaving when emergency personnel showed up, but Jonah actually helped two other men pull the man out of the car. The car was smoking and they were scared it was going to blow up. It took all three (four?) of them to pry open the passenger side of the vehicle. I'm curious to know how he is, but it was probably something medical related that caused him to have a wreck. I love that both Noah and Jonah stopped to help him, as they were not even together that night. Pretty cool, right? I'm thankful they're like this. 


This story also extends to my husband and oldest son, Graham. They were both out on a search and rescue call out all weekend for a woman who was missing in Memphis. This is terrible and tragic story of a woman in her mid thirties who went out for a job and was kidnapped early on Friday morning. They did find her Monday evening and she did not make it out alive. How heartbreaking! There are so many pieces of this puzzle that don't quite fit together just right, but prayerfully the truth will come to light. 


I said all of that to say that I'm thankful my family members are people who help. I can't say that sentence without thinking about Mr. Rogers. I heard him tell someone in a video that when he was a young boy and scared, his mom told him to look for the people who were there to help. 


I am thankful that Jonah has had cars to detail this week. He's been needing some extra money and my friends have come through for him. He loves to do this on the side and it's something he's been doing for about five years. He's not a pro, but he's pretty close! 


I'm thankful for a beautiful park that I get to see everyday that I work.



I love those beautiful and lush hanging baskets. The teal ribbons that you see on the poles are in support of ovarian cancer survivors...I had a beautiful friend named Tarin who succumbed to this terrible illness a few years ago. She is someone who was a friend and godly prayer partner. I miss her! 


I am thankful for a quiet evening at home with my husband. He was so busy all weekend that I barely saw him. He is home as I write this on Tuesday night and we're watching Cops...he has his pants leg pulled up at the moment to let the nail polish dry on the chigger bites he's covering in. Again.


I am thankful to have something to look forward to this month! I am so excited about an upcoming vacation my sister Lisa and I are going on together. If you read my blog yesterday, you'll know that she and I were talking about this on Monday and discussing what to pack for a fall trip to the Cape Cod. I get so giddy when I write that. 


I am thankful that I have great books to read! I'm on a roll this month.

Currently- September edition




Happy Wednesday, friends! You have to love a short week, right? I remember when I worked at my kids' school, how I thought that I could do without them, because it always seemed like the kids were CRAZY on those weeks. I don't know why it was like that, but they were also that way every time there was a full moon. I'm not a superstitious person, but there has to be some science there in order for that to have happened. So, if you're a teacher reading this, I hope your week is nice and normal this week. 


I'm jumping in with what I'm currently loving, beginning, ending, picking and posting


Loving:


I am currently loving the whole blogging world and community. I feel like for so many years this was a huge thing, then it wasn't and now it is once again. It's interesting considering that with how things ebb and flow, but blogging seems to be sticking around. I have heard several people say that with Instagram, blogging has died down, but I don't find that to be true at all. I really enjoy my morning routine when I am up in the five o'clock hour and sit down to drink my first cup of coffee and read other people's blogs. I have my favorites that are bookmarked on my computer that I've mentioned here before, so it's easy for me to get to them now that I no longer have a blog role on the sidebar here. There are some blogs that I love to read, but don't feel like I "know" the one writing. Others I read feel more like friends in real life. Do you feel this way? What about the commenting? I really love comments on my blog, so I try to leave them on other blogs. I also feel like it's important for me to respond to every comment, even if it never gets read. 



There's nothing like that first cup of coffee or tea every morning, am I right? The pups crack me up during this time of morning, too. They're such creatures of habit and after going outside first thing when we all come downstairs, they jump into their favorite spots on the couch or on their beds and promptly fall back to sleep until 7:15, when they start "talking" to me to tell me they're hungry. 


I am also loving my fall decorations that I have already put out in our home. I'll show you a sneak peak.



I really like using my tv background as art. For this screensaver, I am using a free one that is spooky or Halloween themed. Most of the images are of old abandoned homes, which I think is perfect for this time of year. 


Beginning:


I talked with my sister Lisa on Monday, because we're both beginning to get really excited about our upcoming trip. It's crazy to think we'll be leaving in two weeks from this Saturday. Yikes! In a good way, of course. We're both beginning to think about what we want to take with us, because we both plan on taking carry on luggage on our flights. She coordinated our flights for us, because she's flying from Denver and I'm flying from Memphis, so we'll meet up in Boston right around the same time. I'm praying that the Lord works all of this out for us. We were talking outfits and shoes on Monday, which is what prompted me to order some new shoes from Amazon in a brand that I know I love. We feel like the weather will be cooler there, but not so cool that we have to dress too differently than we do in our current cities. 



I can't wait to see more of homes and buildings that look like this! 


Ending:


I feel like this weekend was the perfect ending to a wonderful summer. I enjoyed every second of the summer season this year, thanks to an attitude adjustment that I forced myself to go through. I say that because it's not my favorite season, especially because I am always hot. But, I just reminded myself that I'm hot all the time anyway, and if I just expect it and dress for it, it's not so bad. It worked! I really loved all the summer months this year. 






How could I not have enjoyed it with memories and days like these pictures above? I will carry those memories with me all year long. 


Picking:


I'm picking very September-ish things like darker colors for my nails, cozy jazz music on Spotify, candles that smell like something delicious baking, clothes that are more neutral in color and foods that are a little heartier. I'll give you some examples below.





I've already made taco soup and it was delicious. Tonight I'm making a roast with au jus gravy, peppers and roasted potatoes.

All the fall things on Pinterest! Every year at this time of year, I begin doing that for fun instead of social media. It's fun to dream of places to visit, things to do, ways to change up your home in a way that's affordable and practical and finding new recipes.
