What's for dinner?

 


Happy Tuesday, friends! I thought I'd share what we're having for dinner this week and some other snack type things we sometimes have when we're a light crowd. 

One of our favorite things to have is a baked potato bar. I wash and dry a bunch of russet potatoes and coat them with olive oil and sea salt, and bake them for about two hours on 350. I made homemade bacon bits and grated some sharp cheddar and diced green onion for me. I like to make a whole bag of these at one time and we'll eat on them all week, or I'll turn into potato soup one night. 


I love it when the skin gets all crispy on the outside. 

Drew asked for tortilla soup this week, so I'm making that tonight. I love this soup! I don't make it often enough, but it's one of our favorites.

Here's a recipe, if you're interested:

2 cloves of garlic, minced (or about three TBSP of minced garlic out of a jar)
1 onion, chopped
3 TBSP of butter
2 TBSP of all purpose flour
3 cans (14 0z) of chicken broth
4 cups of half and half (you can use milk to cut the fat) (But why do that?)
1 can of cream of chicken soup
1 cup of fresh salsa
1 can of creamed corn
about 4 cups of chopped chicken, or one rotisserie chicken (which is what I used)
2 tsp of cumin
1 packet of fajita seasoning
3 TBSP of fresh cilantro

And here is what you do:

Start with the butter. Melt it in your soup pot, along with the garlic and onion.  Sauté this until the onion is translucent, then add in the flour.  Stir together and cook for two minutes, so the taste of flour will be gone. 

Add the broth and half and half.  Bring this to a boil (I turned the heat down to medium), then reduce the heat to low.  Add the soup, salsa, corn, chicken, cumin, fajita seasoning, and 2 TBSP of the cilantro.  (I actually used a lot more than that, because I LOVE fresh cilantro.)  Stir, continuing to heat for fifteen more minutes. 

To serve, we top it with a bit of shredded cheese, more fresh cilantro, and tortilla chips. (I always make a huge pot of this, because it's so good as leftovers.)

Wednesday night I'm going to church, so they'll probably eat leftovers if they don't go out to eat. I'm trying a new one pot beef stroganoff recipe I found on TikTok and Friday night I'll either have leftovers or I'll get pizza. Other things I keep on hand that are easy and good are things like pasta with sauces and veggies to throw in, I'm making some quiches again this week, and we love to eat charcuterie type things for dinner complete with smoked sausage, cheese cubes, wheat thins and peppers. 

I love reading the books I'm reading right now, because I am always inspired to cook after reading them. I love books that incorporate food into them. I'm reading another series by Pamela Kelley, the Quinn Valley series.

My family will be gone all weekend, because of a youth event going on at our church and because they help with all the technical things. Noah is going out of town and Graham will probably be at the church as well.

weekending/Hello Monday

 


Happy Monday, friends! I'm linking up with Holly and Sarah for this blog post. 

How was your weekend? Mine was good—we still had lots of ice until Saturday, when a lot of it finally started to melt. I love the ice on trees! It's so beautiful and it was particularly beautiful on Saturday as the sunlight hit it. It looked like diamonds sparkling! 

I drove around for a while on Friday and ended on our town square as I talked on the phone. (I'd gone to get groceries.)





That first picture has nothing to do with the icy trees, it's just a lovely church on the town square that I love and think is beautiful. Because of this and the fact that my dad's power went out, he did not come over on Friday. Their power went out on Thursday and finally got turned back on Saturday night. Thankfully they were prepared and have a generator, gas stove and gas logs. Someone from my house went over there each day to make sure they were okay, which they were, and they were able to keep their house really warm.

I missed seeing him! I didn't do much of anything either of those days, though the people in my house worked. I read and watched movies and went to bed early. I had a wedding to go to Saturday, though, which was so sweet and beautiful. 


Isn't that window beautiful? I love this church that they were married in! Todd was at home during the wedding, so when I came home we had leftover veggie beef stew for dinner. I was at church early Sunday morning and home again for lunch and a nap. I had choir practice that afternoon and Todd and Graham came home shortly after I'd eaten dinner. They had been on a callout all day long and were so tired and windburned after coming home.

Friday Favorites, 2.4.22

 


Happy Friday! I'm linking up with Andrea and Erika for this weekly blog post. How's your week been? Ours is ending with everyone at home due to freezing rain yesterday and icy road conditions today. 

And on that note...

...one of my favorite things to see in all of the world is Drew coming home with a bag. It means he's staying home with us for the weekend and that is another one of my favorite things. There is nothing that feels quite as good as knowing we're all home together. He had a harrowing drive home from work yesterday morning and then came home and crashed the rest of the day. They all went out for dinner last night and hung out before coming back home.

I loved this picture I saw on our town page yesterday on Facebook. I've said this before, but I really do enjoy winter and consider it my second favorite season (my first is fall). I love to see everything coated in a layer of ice. On the flip side of this, I do not love power outages and flickers and hearing the branches snap, crackle and pop. A huge limb fell in our neighbor's yard yesterday that narrowly missed their roof! It's so eerie hearing that at night.


Brownies are one of my favorite desserts. I enjoyed these after dinner last night. I had grand plans to make these, then make dinner for us since we'd all be home and right as I put these in the oven, our power went out. That prompted them to go out and me to eat leftovers. The minute the power came on, I warmed the oven back up to finish these and heated up leftovers from last night.

I was very uninspired for dinner Wednesday night, then I remembered that I had pie crusts in the freezer and a lot of eggs, so I made a couple of quiches. It was so good! I need to remember to do this more often and to keep other things on hand to throw in it instead of just the meat and cheese that was in this one. 


Memories like these above are my favorite. I distinctly remember both occasions. In the first picture, I was laying on the couch after church and settling in for a nap when Jonah came and snuggled up next to me. His sweet little cuddle bug self was always doing this when I would sit or lay down. The boys on the trampoline is such a sweet memory! We had trampolines in our yard for many years, first one and then a second when the first one broke. I cannot imagine how many hours they all spent jumping, but both were well worth the investment. Everyday the boys would do their school work, then I'd send them outside for exercise. 

Those were the days!

Sweet Callie is my favorite dog to see laying on a bed. Isn't she the sweetest? I'd just washed and dried that dog bed cover and she was taking full advantage. Well, that's about all I've got for this week. I'd love to hear from you—how was your week? Thanks for reading, friends! Love to all!

thankful Thursday

 


Happy Thursday, friends! I'm joining in with Rebecca Jo and Leslie for this weekly blog post and gratitude list. 

I'm thankful for easy weeks and days—I've not done much of anything outside of our home this week and yesterday I was so cold that I just wanted to come home and take a shower after Bible study, so I did. And after that, I got comfy and stayed home for church. 

I'm so thankful for encouragement that comes from friends. I've been on the receiving end of that several times this week, from friends who have walked ahead of me in life. I love sitting in the company of such ladies and hearing them talk about life, marriage, parenting adult sons and daughters. We laugh a lot in these times and I just soak it all up. Three of our sons have been so disappointed this week, one with a friend and one in his job (not the two that work with my husband).  I definitely tend to take on whatever they go through.

I'm thankful for a very mechanically inclined husband that is useful in times when our sons need him. He is so over all the vehicle issues, but he has such a great attitude about it and you'd never know. I'm writing this on Wednesday night and he's with Jonah at his shop replacing something on his truck.

I'm also thankful for the times when he or one of our sons makes the Costco run for the week. I don't know why I don't like going there so much, but I feel strongly about it, especially after what Mom and I witnessed last week! We caught a man walking through the parking lot looking in the windows of all the cars. 

I'm so thankful for my sisters. We're all in this continual group text and Debi has all cracking up as I write this. I love our relationship! I know that we're a rare commodity. So many people don't get along with their siblings or never talk to them, but I'm one of the blessed ones. I miss them! Two of us are here and two are in Colorado. Lisa and Debi live there and Trish lives here.


Here we all are back in October of 2020 at The Broadmoor in Colorado Springs. It was freezing when we took this and it was so windy! That was the most fun trip.

Happy Wednesday, friends! I'm linking up with Anne over at in residence for this monthly blog post. This is a list of things I'm currently loving, making, taking, wanting and wondering. I'll jump right in!

Loving:

I bought this cute little sign before Christmas when it was on clearance. Isn't it cute? I love how bright the colors are and the way it looks and I love what it says. I'm also loving some new favorite screensavers I found for our television on YouTube. 

On Friday I cleaned the house before Dad came over and put out some Valentine's day decorations. I always forget how much I have that can be used for this holiday that I don't even like. I'm laughing and rolling my eyes at myself. I think I have too much time on my hands is what I'm saying.

Making:

I'm writing this on Sunday night, so I'm making plans to do a few things around our house this week. I really need to clean out our closet, so hopefully I'll accomplish that and some other areas that need a good de-cluttering. The bookshelf in our bedroom always needs straightening and I need to do the same thing in our living room. I have books all over my house! I also have a few winter decorations out and I would love for those to be put back into the attic. 

I'll be making dinner this week and progress on Bible study homework and (hopefully) a writing project that I have to finish soon.  

Taking:

I'm taking pictures and being more active on social media again. I took a tiny bit of a break during the month of January and I'm starting back slowly. I would get on for a few minutes here and there, but for the most part, I was almost completely inactive. I think I was in a little bit of a weird place in January, or at least at the beginning of the month. I felt more normal by the time the middle and end of the month came around, but I enjoyed the break and not feeling like I had an obligation to be on there for one particular reason or another. 

I'm also taking time to jot down a few notes as I read the Bible everyday. I really like doing that because it forces me to go slower than I normally would. My favorite way to ever read through before was several years ago when we would read one chapter a day and then write in a journal things we'd observed and learned from the text. My pastor always encourages us to do this. Aside from Bible notes, I take time to write out things in my journal each week. It can be lyrics to a song, a thought or quote I read from a book or a list of some sort. I love to write in a journal. 


Wanting:

Speaking of journals, I'm wanting (needing) a new one. Am I the only one who ever has a hard time finding one I like? I like to buy them at Home Goods, but when I went there a few days ago, they had very few to choose from. I wish I didn't mind just using a spiral notebook or something less complicated. Maybe I'll try that...or a composition notebook. This is always when I miss Lifeway! I do have a few other places I can go to find journals I like, like Hobby Lobby, or a cute bookshop inside of a church in Memphis, called The Bookmark. 

Wondering:

Well, we're supposed to get some wintry mix in the next day or two and I'm wondering if it will really happen. So far this year, the meteorologists have been right each time this has been predicted! It's weird because it was in the sixties Sunday through Tuesday, so I feel confident we'll all be battling some sinus issues once again. Jonah has had a rough time with this in the last six months because of the crazy up and down temperatures. Poor guy! 

I watched a story on Instagram that described how I feel about winter mix predictions—after the crazy snow storms and blizzards we had last year, I'd say most of us are a little more leery of these than we used to be, especially those in Texas. You know they have to be wondering if their power grids are any better this year compared to last. She said they're all suffering from PTSD from last year. This particular blogger had extensive damage to their home and they went for weeks without power.

On a more personal note, I'm wondering if I'll ever finish my portion of the Bible study I'm helping write. The material is HARD and I am stuck on one section. I have several more sections to go. This is the most difficult thing I've worked on so far and I'm a little intimidated and overwhelmed by the content. If you want to pray for all of us as a writing team, we sure could use your prayers! Thank you in advance. That picture above was me yesterday, trying to make a little progress.

around our house

 

Happy Tuesday, friends! I thought I'd share a few little areas of our home that I love right now. I suppose I really do enjoy decorating for every season/holiday. I always did when our sons were little, but even though they outgrew this, I did not apparently. I love for our home to look a certain way—"clean", neat and tidy, dusted, vacuumed and I like for it to be pretty. I have this insatiable need for things to look pretty wherever I am. I do this in every space I'm in, whether it dates back to the days when I worked in an office or if it's in my car, a bathroom, our house or if I'm staying as a guest with someone. For the record, I don't decorate my car, but you'll find it neat and tidy! I did hang a Christmas lightbulb ornament necklace from the rearview mirror during the holiday season and I keep those plug in things in my air vents to keep it smelling fresh. Hello, my name is Jennifer and I am my mother's child.

I'm starting with the main focal point in our living room. I learned back in the fall of this past year that you can get a "screensaver" for your television through the YouTube app on your tv. You just turn on your tv, scroll down to YouTube and type into the search bar, "Valentine's day screensaver" or "pretty screensaver" or "seasonal screensaver" and you'll see tons of options. This one is my current favorite. I like to subscribe to a channel that I know I love, like Calmed by Nature or Candy Music Room because that makes it easy for me to find. This one pictured above is by Candy Music Room. There are hundreds to choose from! I love the little Parisian cafes or bookstores like this one and I like that lots of them have calming background music. It's nice to leave on all day, so I love it when they're hours long. This one is around seven hours long, I think, but some of them are live and will go all day. This does not damage your tv screen in any way and it makes it unnecessary to buy an expensive art frame tv.

While I was cleaning Friday before my dad came over, I switched out a lot of my stuff for the more "spring like" décor I had put away. I put this little jar with flowers out where a green plant had been. I love to buy things like this from HomeGoods. It's my favorite store for home décor and I like to buy things that look and feel realistic. These flowers feel real! I just need to add some clear pebbles to the bottom or something. I love to use lots of books and special lighting in all of our spaces and I like to hide the cords or outlets as much as possible. Side note—this drives my husband insane, but I can't stop. 


I love lots of signs and pretty containers, like these green ones Mom gave to me years and years ago. I keep our coffee creamer and sugar in these jars. And once again, I love using little plants or topiary trees like this one that sits beside our coffee pot.

I keep these wreaths up all year and I just change out the ribbon. I have them here above the kitchen sink and on the cabinets across from this that hang above the oven. I like to buy the hand soaps that come in glass jars from HomeGoods and keep them for other things, like the dish washing soap I keep out on the sink. When it gets clogged, I just take it apart and clean it really well. 


I keep this little board by our kitchen for things I love, but that I don't want just sitting around. Lots of old favorite pictures hang here, or my favorite Christmas photo cards from family and friends. 


I somewhat cleaned off the bookshelf in our living room last week and wanted to share this cute little typewriter I bought myself while out of town with my best friend. It came from the adorable bookstore on the square of Columbia, Tennessee that I fell in love with. That ornament that says "book nerd" also came from there that Missy gave me for Christmas. 


Isn't this sign so adorable? I love color and think it looks cute sitting on the desk that is in our living room. I rearranged the top of that on Friday as I cleaned and moved things around. I think it came from the Dollar Spot in Target a few months ago.


I just keep adding to the things hanging from the mantle. I'll clear it off after this month, most likely. Those lights stay put all year long and I've kept the greenery and red berries up on purpose.


One more, with a different screensaver. I love these! 


I love lanterns and houses and keep these on the piano in our living room. I also keep nativities out that people give to me, like the one you see resting next to that piano book. The rock is one that my boys gave to me when they were little and says, "God rocks." 

I've said this before here that I don't decorate in a way that is trendy and our home isn't so beautiful that it could be featured in a magazine, at least by most people's standards. I don't even fully know what my style of decorating is, other than eclectic. I like a mixture of things that are sentimental to me and I have never been scared of color. Our home is beautiful to me, and that is all that matters. Mom and I were talking about this over the weekend, how your style can change every few years. I would love to say my style is traditional or shabby chic or French country, but it's not. I do like a mixture of all those things, but I love a colorfully decorated, warm, inviting and cozy style. I like to engage all of the senses while decorating our home. 

More than I want any of that, I want people to feel loved and treasured as they come inside. It's not the stuff that matters, it's the people inside and as long as my people are here, it'll feel wonderful. What about you? Do you decorate for the seasons and holidays? Hello Monday- a little bit of weekending and the books I read in January

The weather here was beautiful this weekend! Even though it was cold, it was sunny, which is way better than when it's dreary. I loved being out and about a little here and there. I didn't do much Friday night, but I went out with my mom for a little while on Saturday. We went to one of our favorite stores.

There's this beautiful home décor shop nearby called John Mark's. He's a floral designer and there are beautiful arrangements and décor in his shop. This was the doorway going in. Gorgeous, right? We had an amazing service on Sunday with a guest speaker—Jonathan Evans, son of Tony and brother of Priscilla Shirer. He was so good! Then I had choir practice and went to pick up pizza before coming home. 

It was a good weekend.

Now, onto my favorite thing to talk about—books! I love sharing the books I read each month, but more than that, I love to hear what you're reading and would love some more recommendations! I find out about books mostly through emails. I've subscribed to a lot of pages that allow me to follow my favorite authors, and I'm always getting special offers and advance copies because of that and through launch teams that I've been on in the past.

I really liked this! I hope to finish this series in the next couple of weeks, since I'm waiting on them both from the Libby app I use from my library.

I thought this book was just okay and was a little let down, despite that great description. It was a lot to live up to and fell a bit short for me, but I'm still glad I read the book. 

3. The Honey-Don't List by Christina Lauren. (I would give this an R rating.)

I have a love-hate relationship with their books. (Christina Lauren is the writing name for a pair of best friends.) This one was just okay to me and it seemed to go on and on.

4. The Wish by Nicholas Sparks.

I rated this book with ⭐⭐⭐⭐⭐! Maybe it was the year that the backstory takes place, maybe it's that I haven't read one of his books in ages, maybe it's because I was shocked at one point, who knows. I loved this book and was thrilled when I was able to skip the line through Libby to read it before I'd expected.

5. One by One by Ruth Ware.

I thought this one was really good. I love reading books set in whatever season we're currently in and throw that in with the fact that this one felt like an Agatha Christie, and I was smitten.

6. Big Little Lies by Liane Moriarty.

Big Little Lies is a brilliant take on ex-husbands and second wives, mothers and daughters, schoolyard scandal, and the dangerous little lies we tell ourselves just to survive.

This book was another ⭐⭐⭐⭐⭐! Now I'm going to watch this on HBO Max, which is how I even found this book. When I saw in the credits it was based on this book from this author, I quit watching and ordered the book.

7. Reminders of Him by Colleen Hoover. (Rated R.)

I had heard this book was better than one of my favorite books of all time, but I have to disagree. It was really good, but no book that she writes will ever top It Ends With Us. I did really like this book, that being said, and I love how she wraps up a book. If you've never read a book by her, you should try one, but know they're all going to be rated R. I just skim over the parts I don't like to read.

8. In Five Years by Rebecca Serle.

This was for sure another ⭐⭐⭐⭐⭐ for me!
